Yield 15 servings
3 ½ pounds – Apples, Red, Medium
3 pounds 12 ounce – Vanilla Yogurt
15 Maple WG Tortillas
¾ cup Honey
2 ½ tsp. Ground Cinnamon

Make the filling the day before service and store in refrigerator overnight to allow enough
time for the filling to chill down completely

Apple Pie Filling
1. Wash apples
2. Slice apples on all four sides around the core
3. Rough chop apples to dice
4. Weigh out 3.5# of diced apples into a large mixing bowl. (This will be approximately 14-15
apples.)
5. Add honey and cinnamon to apples then toss together to coat the apples
6. Spread apples out on parchment line sheet pan
7. Bake apples @ 325 for 12-14 minutes
8. Remove apples from oven and transfer to hotel pan
9. Allow to cool for 5 min. then cover with foodservice film
10 Allow chilling until it reaches an internal temperature of 35 degrees or lowering

 

Maple Tortilla
1. Thaw tortillas overnight
2. Preheat oven to 325 degrees
3. Using a knife and cutting board slice tortillas in half
4. Line sheet pan with parchment
5. Arrange tortilla halves in a single layer on sheet pan
6. Bake at 325 degrees for 6-8 minutes or until crisp
7. Allow to cool on speed rack
8. Place two halves per sandwich bag for service

Assembly
1. In 12 oz plastic cup, measure 4 oz of yogurt
2. Place 1 #8 Dipper of apple pie mixture on top of yogurt
